This is the first website that I found that encouraged me to keep on. I even added her to my facebook friends! She will chat with you, email you or whatever! What a sweetheart! This is a link to the recipes. You HAVE to try the cheese chips! You will think you are eating potato chips and they are so easy to make. You only need cheese, garlic or onion powder or whatever flavor you want to add. Dip in sour cream. I have included the chips recipe below.

got recipe from sugarfreesheila.com - tweaked it and used shredded cheese (any flavor - the picture, once I figure out how to upload it - is colby jack, thin shredded) and I add powder Ranch dressing before baking - bake at 400 about 6 min until browned but not burned, on a VERY well greased, the ranch does add 1 carb per 1/3 tsp but are no carb with garlic or onion powder EXPERIMENT with your own flavors! The shredded cheese, instead of grated cheese makes a crispy chip b/c it has all the spaces that bake crispy. The first time I put it on the pan to bake, I put too much in each chip and it runs together and is not as crispy - still good - but I like the crispy! It is kind of like the difference between wavy chips and just regular thin chips. Serve with sour cream if you like. I store them in a baggy in the fridge and they are good cold too.

mock mashed potatoes
omg! mock mashed potatoes taste soooo good! I just had some and they are delicious! There are several recipes online, but I have tweaked some.
These are net carbs. I have also listed the net carb counts from the packages.
Mock Mashed Potatoes
1 lb. pkg frozen cauliflower, boiled for 30 minutes and drained very well. (10 carbs)
Pour into a bowl over 3 oz (6 T) cream cheese and mix/mash well. (6 carbs)
Add 1 big spoonful of sour cream, pinch of salt and enjoy! (2 carbs)
I also have added grilled thick sliced onions, sauteed in butter. (2,8 per 1/4 cup carbs)
You can add a handful of cheese if you like, garlic or onion powder.
Be creative and experiment!
The whole recipe has about 18 carbs, and add 2.8 for 1/4 c onions.
These are very easy to reheat and still as yummy! I am a picky eater and I am amazed at how good they are each time I eat them.

Wow! I just figured this out and will be sharing low carb recipes and my thoughts.
